As promised here is my first recipe using one of the many herbs that I talked about last week...Thyme! These Garlic Roasted Thyme Chicken Wings are super easy to make and literally finger-licking good. Check out the video where I walk you through each step and you will get a little taste of what the crazy "witching hour" (that time between homework, dinner and bedtime) is like in my house.
Garlic Thyme Roasted Chicken Wings
3.5 lbs of Chicken
1Tbs Sea Salt (adjust to taste)
1Tbs Dried Thyme (adjust to taste)
Juice of 1/2 Lemon
5-6 Cloves of Garlic, Chopped
3/4 cup Extra Virgin Olive Oil
Preheat oven to 400 degrees. Use the roasting option if that is available on your oven.
Season the chicken with the salt and thyme and place chicken in roasting pan. I prefer chicken wings for the recipe but you can use any part of the chicken.
Mix the olive oil, lemon juice and chopped garlic in a bowl and stir it together. Evenly drizzle mixture over chicken making sure that all pieces are coated. Place chicken in the oven and roast until the skin is crispy and it is a golden brown color (45 mins. - 1 hour).
Recipe makes 4-6 servings. I doubled the recipe in the video.
