This week Nolan and Ledgend join me to help make my mom's homemade granola. Yum!!! This granola is easy, delicious and not filled with all the crap you find in cereal at the grocery store. 2 Cups Rolled Oats
3/4 Cup Shredded Coconut
1/2 Cup Raw Pecans
1/2 Cup Raw Pepitas (Pumpkin Seeds)
1/2 Cup Raw Sunflower Seeds
1/2 Cup Brown Sugar
1/2 Cup Melted Butter (I use salted butter)
1 Tbs Vanilla Extract
1 Tsp Cinnamon
Combine all oats, nuts and dried coconut in a large mixing bowl. Add more of any of the nuts or dried fruit to your taste.
In a separate bowl, combine the butter, brown sugar, vanilla extract and cinnamon. Stir until all ingredients are mixed together.
Pour butter mixture over oats mixture and stir until the oats and nuts are completely coated. Pour mixture into a baking pan and spread evenly over pan.
Bake granola at 250 degrees until golden brown. One batch takes about 2 hours. Once the granola has cooled, break up with a spoon and place in an air tight container and store it like cereal.
Note: Feel free to play with the flavors of the granola. As long as you keep the ratios of 2 cups oats: 1/2 cup brown sugar: 1/2 cup melted butter, you can play around with the other parts of the recipe. Replace any of the nuts with other raw nuts such as walnuts, almonds or cashews or replace the coconut with another dried fruit.The vanilla extract can be replaced with any other extract such as almond or even chocolate and the cinnamon can be replaced with other spices such as Nutmeg or Pumpkin Spice. You may like an apple cinnamon flavored granola or a pumpkin spice granola. Don't be afraid to make it your own.
